Orange Ricotta Cookies

Ricotta orange cookies are an Italian sweet cake like cookie with a fresh orange glaze. The cheese can sound intimidating but it is what gives the cookie its moisture and lightness. In our family, my mom is the baker. Every year she makes homemade fudge, sugar cookies, snow balls, and so much more. She has instilled a love for baking in me and now my daughters. Once we started harvesting oranges, I began making these ricotta cookies. They were very much outside my comfort zone when I first found the recipe but now they are another tradition of the holidays! INGREDIENTS

 

For the cookies

  • 2 1/4 cups all-purpose flour

  • 1 teaspoon baking powder

  • A pinch of salt

  • 1 cup granulated sugar

  • 1/2 cup (1 stick) unsalted butter, softened to room temperature

  • 2 eggs

  • 8 ounces fresh whole-milk ricotta

  • 1/2 teaspoon vanilla extract

  • Zest of 1 large orange (about 2 teaspoons)

 

For the glaze

  • 1/4 cup orange juice

  • 1 teaspoon orange zest

  • 3 cups powdered sugar, sifted

 

Steps

  1. Preheat oven to 325 degrees and position rack in the upper third of the oven.

  2. Line cookie sheets with parchment paper.

  3.  Sift dry ingredients together into a bowl.

  1.  Mix sugar and butter in a mixing bowl. Add eggs one at a time, mixing well after adding each one.

  2.  Add ricotta, vanilla, and orange zest. Mix again.

  3.  Pour in flour mixture, then mix on low speed just until combined. Be careful not to over mix.

  4.  Scoop the cookie dough onto the parchment lined baking sheets.

  5.  Bake for 20 minutes or so, until the cookies are puffed and light and tender.

  6.  Remove from the oven and slide the parchment paper right onto the cooling racks. Cool cookies completely.

  7.  In a small bowl mix powdered sugar and orange juice, this will be your glaze.

  8.  Dip the top of each cookie into the glaze, then turn back over and place on wire rack so the glaze drips down.

  9. Let cookies dry for about 2 hours so the glaze firms up.
